Finnish Cucumber Salad/ Kurkkusalaatti

This was my mother’s recipe. It was the one thing she made a lot of during the summer. Mom wasn’t a cook. She hated being in the kitchen. She found the whole thing a big waste of time. She would say to me I can’t believe you spend all that time in the kitchen and it is then eaten in 15 min. That was not her passion as it clearly is mine. She loved being in the garden. She would be there all day long and she had amazing gardens, winning many awards. Anyway I remember her making this salad many times and we all loved it. It is light and refreshing and of course so easy to make. It is called Kurkkusalattti in Finnish. My mom was from Finland and I still have lots of relatives there. You have to try this it is so good. Adjust the sugar to your liking. Kids of course enjoy it a little sweeter.

1/2 cup water
1/2 cup white vinegar
3 Tbsp. sugar
1 tsp. salt
3 cups sliced cucumber
1 1/2 Tbsp. chopped fresh dill

Mix the water, vinegar, sugar and salt together and stir to dissolve the sugar and salt. Add the cucumber and dill. Refrigerate several hours to let meld. Perfect for a hot summer day.
