Quinoa is a great grain to work with, very versatile. The fabulous thing about cooking is the creativity. Your options are limitless. You can take one ingredient and move it in so many directions. This is a very easy salad that can be made ahead of time and can be changed in so many ways. Grab some quinoa and give this excellent salad a try or experiment to make your own. It is as easy to cook as rice and it is delicious!!!
Greek Quinoa Salad

A vegetarian salad that is an excellent source of protein.
Ingredients
- ¾ cup quinoa
- 4 small cucumber, large diced
- 1½ cup grape tomatoes, halved
- 1 yellow pepper, diced
- 1 green pepper, diced
- ¾ cup crumbled feta
- Salt and pepper to taste
- Dressing
- ⅓ cup olive oil
- 3 Tbsp. red wine vinegar
- 1 sprig oregano, chopped
- Salt and pepper to taste
Instructions
- Soak quinoa in water for 5 min. Drain and rinse. Add quinoa with 1¼ cup water and ¼ tsp. salt to a small saucepan cover and bring to a boil, reduce heat and simmer for 15 min. Let rest for 5 min. Fluff with a fork and let cool.
- Meanwhile mix vegetables together. Shake dressing in a jar. Mix quinoa with the vegetables and add crumbled feta, salt and pepper to taste. Careful as feta is salty. Pour dressing over the salad and toss.
- Refrigerate for 1-2 hours and serve.
