Best Ever Oatmeal Raisin Cookies
These Best Ever Oatmeal Raisin Cookies are great!!! I got this recipe from a good friend of mine, Carla. She is a fabulous cook and we have enjoyed many a meal at their beautiful home. I package these cookies up in twos and freeze them for Amber’s lunch.
Makes 4 dozen.
1 1/4 cup flour
1 tsp. baking soda
pinch of salt
1 cup butter, softened
1 cup brown sugar
1 tsp. vanilla
1 pkg. instant vanilla pudding
2 eggs
1 cup raisins, soaked in hot water and drained
1 cup oatmeal
1 cup coconut, shredded, sweetened
2 cups cornflakes
Preheat oven to 350F. Whisk together flour, soda and salt and set aside. In a standup mixer with a paddle attachment, cream butter and brown sugar. Add vanilla and pudding mix. Beat in eggs. Slowly add flour mixture. Remove dough to a larger bowl and add raisins, oatmeal, coconut and cornflakes. Start to mix in with a wooden spoon. At the end I lightly mix with my hands to make sure all the ingredients are incorporated well. Drop by tablespoon onto a lightly greased cookie sheet, flatten slightly. Bake for 12-16 min.
