Open Faced Egg Avocado Smoked Salmon Sandwich

A delicious and fast sandwich using the goodness from eggs!
Avocado Mash
  • 1 ripe avocado
  • 1 tsp. lemon or lime juice
  • Garlic salt, taste
  • Pepper, to taste
  • 1 Tbsp. sour cream
  • 2 hard boiled eggs
  • 2 slices French bread
  • Avocado Cream
  • 2 Smoked Salmon slices
  • Alfalfa sprouts
  1. Mash the avocado with a fork but leave it slightly chunky. Gently mix in the lemon juice, garlic salt, pepper and sour cream.
  2. Divide the avocado between the two slices of bread. Slice the eggs in quarters and place four slices of egg per bread slice. Top with the smoked salmon and alfalfa sprouts. Serve.
