Roasted Sheet Pan Potatoes and Sausage

A simple hearty meal of Roasted Sheet Pan Potatoes and Sausage is a fast fix for any night of the week.
  • 1.5 lbs. Little Potato Company's Something Blue Creamer potatoes, halved
  • 10 oz. Ukranian or Polish sausage, sliced
  • 1 large red pepper, large diced
  • 1 bunch asparagus, cut in three to four pieces each
  • 2 Tbsp. olive oil (EVOO)
  • 1 tsp. thyme
  • Kosher salt and freshly ground pepper
  1. Preheat oven to 425F.
  2. Place the potatoes, peppers and asparagus on a large rimmed baking sheet. Sprinkle on the oil, thyme and salt and pepper and toss. Add the sausage.
  3. Bake for 30 min. or until potatoes are tender and starting to brown. Serve immediately.
