Greek Quinoa Salad

A vegetarian salad that is an excellent source of protein.
  • ¾ cup quinoa
  • 4 small cucumber, large diced
  • 1½ cup grape tomatoes, halved
  • 1 yellow pepper, diced
  • 1 green pepper, diced
  • ¾ cup crumbled feta
  • Salt and pepper to taste
  • Dressing
  • ⅓ cup olive oil
  • 3 Tbsp. red wine vinegar
  • 1 sprig oregano, chopped
  • Salt and pepper to taste
  1. Soak quinoa in water for 5 min. Drain and rinse. Add quinoa with 1¼ cup water and ¼ tsp. salt to a small saucepan cover and bring to a boil, reduce heat and simmer for 15 min. Let rest for 5 min. Fluff with a fork and let cool.
  2. Meanwhile mix vegetables together. Shake dressing in a jar. Mix quinoa with the vegetables and add crumbled feta, salt and pepper to taste. Careful as feta is salty. Pour dressing over the salad and toss.
  3. Refrigerate for 1-2 hours and serve.
