Spicy Quinoa and Chorizo by Mama's Blissful Bites

A super satisfying meal in a bowl, that any cowboy would love!!
Ingredients
  • 4.9 oz of quinoa (I used roasted red pepper and basil)
  • 1 tbs olive oil
  • 1 small onion: chopped
  • 1 red pepper: chopped
  • 12 ounces chorizo
  • 28 ounces whole tomatoes
  • pinch of red pepper flakes
  • salt and pepper
Instructions

  2. Cook quinoa according to instructions.
  3. Meanwhile, over medium heat, add olive oil. Heat the chorizo for 7-8 minutes until cooked through with a nice brown outside. Place on plate.
  4. Place onions in same sauté pan for 1-2 minutes then add peppers. Turn heat to low for 7-8 minutes until onions and peppers become soft.
  5. Add tomatoes, quinoa. Break up chunks of tomatoes. Add red pepper flakes, if using.
  6. Return chorizo to pan. Bring to boil, lower heat to a simmer for ten minutes
