Apple Butterscotch Cookies for Creative Cookie Exchange

  • 1 cup softened butter
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1½ tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 300 gm. bag butterscotch chips
  • 1 cup chopped dried apple
  1. Preheat oven to 375°F. In large bowl, cream softened butter, brown sugar and granulated sugar until fluffy. Beat in eggs and vanilla. In medium bowl, mix together flour, baking soda and salt. Gradually blend into creamed mixture. Stir in butterscotch chips and dried apple. Drop from small spoon onto ungreased cookie sheet, or use parchment paper or Silpat liners. Bake 10 to 12 minutes until golden brown.
