Friday Night Cooking Classes/Spaghetti and Meatballs

Well, it’s Friday Night Cooking Classes/Spaghetti and Meatballs today. I think we have made these already but with the release of The Hunger Games yesterday we were off to the movies!! By the time we got back, it was too late to start making cabbage rolls. So the cabbage rolls are now in the oven and you have spaghetti and meatballs.

Amber has found a new love for this dish ever since we were at Bucca di Beppo in Southern Cal. this past February!! They say they are as big as your head!! Well, maybe not quite but they are sure good. She loved them and has been talking about them.  Here is our rendition. I hope you enjoy it!!

Friday Night Cooking Classes/Spaghetti and Meatballs

Well, I think we have made these already but with the release of The Hunger Games yesterday we were off to the movies!! By the time we got back it was too late to start making cabbage rolls. So the cabbage rolls are now in the oven and you have spaghetti and meatballs.

Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • Meatballs
  • 1 lb. extra-lean ground beef
  • 1/2 lb. lean ground pork
  • 1/2 cup grated Parmigiano Reggiano
  • 1/2 cup breadcrumbs
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 tsp. salt
  • 3 large eggs
  • 7 cloves chopped garlic
  • Tomato Sauce
  • 5 cloves garlic, minced
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 carrot, diced
  • 2 Tbsp. extra virgin olive oil
  • 1/4 cup parsley, chopped
  • 2- 28 oz. can diced tomatoes
  • salt and pepper to taste
  • 1/2 cup grated Parmigiano Reggiano

Instructions

    1. For the meatballs, in a large bowl mix together all the ingredients using your hands and roll meatballs into golf ball-sized shapes. You should get approx. 40 meatballs. Set aside.
    2. In a large pan heat olive oil and saute garlic, onion, celery, and carrot for about 6 min.
    3. Add parsley and saute one minute.
    4. Add tomatoes, salt, and pepper.
    5. Place meatballs in the sauce, cover and simmer for 45 min.
    6. Serve with spaghetti or linguini and top with the parmesan.  Enjoy!!
