I love sharing with you Mondays. It is my time to just chat. Hope you all had a great summer and you are now starting to gear up for fall. This is my absolutely favorite time of the year!! I love all the colors!! I am treating myself this fall to a little trip out east where you can really get some pretty fall colors and to visit all my besties!! Can’t wait!!
One thing about fall that I love is soup!! Oh the endless possibilities. One of my best posts and one of the most popular has been this soup that I made last August, Roasted Sweet Potato and Quinoa Soup. It screams fall with it’s bright orange color and thick satisfying texture. A real rib sticker. Now that fall is coming I will have to make this again. There is no cream or gluten in the soup. You can omit the panko topping to keep it gluten free and vegan. If you do add the topping it is still a great vegetarian option with adding the vegetable broth.
