Here is another great side dish, they are like roasted potatoes but with a twist. Ken loves to make these and they go great with a steak or roast. They are a little finicky but Ken has perfected them for you. I love how you can now get various coloured potatoes like white, red, purple and gold all together.

Boil the new potatoes until fork tender and then drain. Preheat oven to 400F. Take the potatoes one at a time between two tea towels and gently smash then flat. Here is the trick, instead of trying to now pick them up, take the potato with the tea towel and flip it over onto a spatula. I know it is not rocket science but it works well. Now you can easily place this onto a parchment lined rimmed baking sheet. Repeat with all the potatoes. Drizzle with olive oil making sure some gets under the potatoe. Sprinkle with salt. Bake for 20 min. and turn over. Bake for another 15-20min. until golden brown and crisp. Sprinkle again with salt. Serve immediately. Enjoy!!!
