We are over at Real Housemoms today with our Spinach Balls. I dreamt up this idea watching The Chew, they were making meatballs and I thought hmmm, what about a vegetarian ball as an appetizer. I thought spinach would work very well and be the perfect green for St. Patrick’s Day too. I found out after that spinach balls were quite popular and there were a few recipes around for them. I wanted ours to be light and slightly crisp. A great appetizer to go with a pint of beer and a little dip.
I just used a prepacked dill/lemon dip when serving these, easey peasey. They freeze well and can be at the ready for company. Hope you love them as much as we did. Happy St. Patrick’s Day. Come on over to Real Housemoms for the RECIPE!
