Simple Easy Homemade Canned Tomatoes

fresh tomatoes fresh sprigs of basil or oregano lemon juice clean or sterile jars

Wash tomatoes and cut a small 'x' in the bottom.

Place tomatoes in boiling water.

Place the tomatoes in an ice bath to cool.

The skins should just slide right off. Cut into quarters.

Place a 1/4 of the tomatoes in a large pot. Boil and crush. Add the rest of the tomatoes.

Add lemon juice, herb sprig and tomatoes to each jar.

Add lids and rims to jars. Process in a boiling water bath. See post for processing times.

Remove jars to a towel lined counter. Cool and store.
