Ingredients
 

Avocado Mash

  • 1 ripe avocado
  • 1 tsp. lemon or lime juice
  • Garlic salt taste
  • Pepper to taste
  • 1 Tbsp. sour cream

Sandwich

  • 2 hard boiled eggs
  • 2 slices French bread
  • Avocado Cream
  • 2 Smoked Salmon slices
  • Alfalfa sprouts

Instructions
 

  • Mash the avocado with a fork but leave it slightly chunky. Gently mix in the lemon juice, garlic salt, pepper and sour cream.
  • Divide the avocado between the two slices of bread. Slice the eggs in quarters and place four slices of egg per bread slice. Top with the smoked salmon and alfalfa sprouts. Serve.
