St. Patrick's Day Pistachio Iced Coffee

This St. Patrick's Day Iced Coffee is a great way to celebrate the holiday. Have it as an after dinner coffee/dessert to end a meal perfectly. With pistachio ice cream, cold coffee and Bailey's it is an adult treat that you will adore.

Ingredients
 

  • 2 scoops of Pistachio Ice Cream add an additional scoop if desired
  • Splash Sweet Cream Creamer
  • 2 ounces 1 1/3 shot Irish Cream Liqueur (like Bailey’s)
  • 8 ounces Cold Coffee
  • Sugar to taste for sweeter version (optional)
  • Whipped Cream for garnish
  • Green Sprinkles for garnish (optional)

Instructions
 

  • 1. Place ice cream scoops in a cup.
  • 2. Drizzle in creamer and liqueur.
  • 3. Fill the cup with cold coffee.
  • 4. Add sugar if desired.
  • 5. Top with whipped cream and green sprinkles.

Notes:
Pro Tips:
1. To keep ice cream scoops from melting right away, make them beforehand and place them in the freezer several hours before serving.
2. Some pistachio ice cream is green in color and some is white, either one will work for this recipe.
3. Can add more or less alcohol as desired. This can also be made as a non-alcoholic drink, you’ll probably want to add a little more creamer in this case though.
