Fresh Raspberry Mojitos

Refreshing and light are these Fresh Raspberry Mojitos with or without rum. They can be sweetened up with more raspberry syrup if you want a sweeter version or if you are serving kids. Perfect libation for summer backyard BBQs.

Ingredients
 

  • 1/2 lime cut into 4ths
  • 6 fresh raspberries
  • 6 mint leaves
  • 1/2 ounce raspberry syrup or more to taste
  • 2 ounces rum
  • 2 ounces club soda
  • Ice

Instructions
 

  • Add lime wedges, raspberries, and mint leaves to a glass. Muddle until fragrant and everything is broken up.
  • Add ice to the glass. Pour in the raspberry syrup and rum. Stir to combine. Top with club soda, garnish with more raspberries, mint, and lime, optional.

Notes

Extremely refreshing and the addition of raspberry syrup really amps up the raspberry flavor. This recipe is slightly sweet. If you like it on the sweeter side, you can use double the syrup. Sometimes I even like to use lemon-lime soda in place of the club soda for added sweetness, SO GOOD.
