Prepare & bake the cake mix according to the instructions on the package. Remove from the pan and cool on a wire rack.
Once the cake is cooled completely, transfer it to a large bowl and finely crumble using your hands.
Add frosting and mix well until you can form a ball. It should be malleable but firm.
Roll out 1 ½” sized balls; depending on how big they are, you should be able to make 20 – 24 small cake balls. Don’t make a large cake ball, as they may then come off the sticks.
In a microwave-safe bowl, melt ½ cup of the vanilla white candy melts in 10-second intervals of about 3-5 times, stirring in between until it is smooth.
Dip a lollipop stick into the melted chocolate and then about halfway into your cake ball. Freeze for 1-2 hours on baking sheets lined with parchment paper.
Once the cake pops are ready to come out of the freezer, melt the rest of the vanilla melts in a microwave-safe bowl, again for 10-second intervals, stirring in between about 4-5 times until it is smooth. **You can add 1 Tbsp of coconut oil to help thin out the vanilla melts.
Dip your cake pops into the melted chocolate, completely coating it. Allow it to firm up by placing it upright, sticking the ends of the lollipop sticks into sturdy styrofoam, or I used a few mugs filled with rice (this worked really well). *Note if you want your snowmen to wear hats, gently apply them before the candy melts are completely hardened.
While your cake pops are hardening, roll out your fondant with a rolling pin and use a sharp knife and round cookie cutters cut out scarves, bowties, hats, or whatever you want to make to decorate them with.
Once the cake pops have firmed up, add the scarves and bowties. I like to use a drop of water brushed on using my finger anywhere the fondant needs to adhere, such as where it overlaps when you wrap it around your cake pop. You can also use additional fondant to create a “neck” where the bowtie and scarf are placed.
Lastly, take the black and orange writing gel to make their nose, eyes, mouth, and buttons.
