Instant Pot Rice Pilaf with Orzo

It’s easy to have perfectly cooked Rice Pilaf when you make it in your Instant Pot! With minimal ingredients and minimal prep work, this dish comes together quickly. The combination of tender rice and aromatic herbs makes this dish a true crowdpleaser.

Ingredients
 

  • 2 tablespoons butter
  • ½ cup finely diced onion
  • 3 garlic cloves minced
  • ½ cup orzo or vermicelli
  • 1 ½ cups long grain rice rinsed
  • 2 ¼ cups low-sodium chicken or vegetable broth
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup parsley chopped

Instructions
 

  • Turn on the SAUTE function of your Instant Pot. Melt the butter in the Instant Pot pan, then add the diced onion and minced garlic. Sauté for 3-4 minutes, stirring frequently, until the onions are soft.
  • Add the orzo (or vermicelli) and the rice. Sauté an additional 3-4 minutes, or until the orzo is starting to turn golden brown.
  • Add the chicken broth, salt, and pepper. Place the lid on the Instant Pot and seal the valve closed.
  • Cook on HIGH pressure for 3 minutes for white rice or 15 minutes for brown rice. Allow the steam to release naturally for 10 minutes, then release the valve to dispense any remaining pressure.
  • Remove the lid. Stir the parsley into the rice and serve immediately.
