Caprese Melon Salad

You won't find a much prettier salad than this Caprese Melon Salad. It has a gorgeous sweet-to-salty ratio that is perfect for a hot summer night.

Ingredients
 

  • 1 Small Cantaloupe
  • 3 Tablespoons Fresh Basil minced plus more for garnish
  • 8 Ounces Fresh Mozzarella Balls
  • ½ Medium Watermelon

Lime Dressing:

  • ¼ Cup Extra Virgin Olive Oil
  • 1 Teaspoon Black Pepper
  • ½ Teaspoon Kosher Salt
  • Juice of 2 limes
  • Zest of one lime plus more for garnish
  • 2 Tablespoons Honey

Instructions
 

  • In a small bowl, combine all of your dressing ingredients and set aside.
  • Using your melon baller, cut out small spheres of watermelon and cantaloupe. You can use a small melon baller or a big one, based on your preference.
  • In a large bowl, add melon balls, mozzarella balls, and dressing. Toss gently to combine. Add in your fresh basil and toss again.
  • Top with more basil, lime zest, and dressing if desired.
