Ingredients
 

  • 1/2 cup vegetable oil
  • 4 squares 4 oz. unsweetened chocolate, melted
  • 2 cups granulated sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 2 cups all purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup confectioners' sugar

Instructions
 

  • In the bowl of a standup mixer attached to a paddle add the oil, chocolate, and sugar. Mix well.
  • Add eggs one at a time until well mixed. Add vanilla.
  • Add flour, baking powder, and salt together and add gradually to the chocolate batter.
  • Wrap well in plastic wrap still in the bowl if desired for at least 2 hours or overnight in the refrigerator.
  • Preheat oven to 350F. Scoop out dough about 1 Tbsp. at a time and roll into a ball and then into confectioners' sugar.
  • Place about 2" apart on a greased baking sheet. Bake 10-12 min. DO NOT OVERBAKE!!
  • Let cool on pan and then move to a wire rack to completely cool.
  • Keeps for 5 days or frozen for 3 months.
