Ingredients
1/2
cup
vegetable oil
4
squares
4 oz. unsweetened chocolate, melted
2
cups
granulated sugar
4
eggs
2
tsp.
vanilla
2
cups
all purpose flour
2
tsp.
baking powder
1/2
tsp.
salt
1
cup
confectioners' sugar
Instructions
In the bowl of a standup mixer attached to a paddle add the oil, chocolate, and sugar. Mix well.
Add eggs one at a time until well mixed. Add vanilla.
Add flour, baking powder, and salt together and add gradually to the chocolate batter.
Wrap well in plastic wrap still in the bowl if desired for at least 2 hours or overnight in the refrigerator.
Preheat oven to 350F. Scoop out dough about 1 Tbsp. at a time and roll into a ball and then into confectioners' sugar.
Place about 2" apart on a greased baking sheet. Bake 10-12 min. DO NOT OVERBAKE!!
Let cool on pan and then move to a wire rack to completely cool.
Keeps for 5 days or frozen for 3 months.
