This Crab Boil Potato Salad has all the flavors of a crab boil and more. It is easy and uses simple ingredients but its rich creamy goodness is exploding with flavors.

Ingredients
 

  • 1 1/2 lbs. Little Potato Company Terrific Trio
  • 1 cup frozen corn thawed
  • 2 celery stalks chopped
  • 6 slices bacon cooked
  • 1 cup mayonnaise
  • Juice of 1/2 lemon
  • 1 tsp. Old Bay Seasoning
  • Fresh cracked pepper
  • 1 120 gm. can of chunk crab, drained
  • Parsley for garnish

Instructions
 

  • Cut potatoes in half or thirds for the larger ones and boil for 15 min. in a medium sized pot until just tender. Let cool to warm. Then add in the corn, celery, bacon, mayo, lemon juice, Old Bay Seasoning, fresh cracked pepper and stir. Gently fold in crab. Chill and serve topped with parsley.
