Potato salad can really be a blank canvas, giving way to lots of other ingredients that are just begging to be added. We love potato salad here and make loads of it in the summer months using Little Potato Company Creamer potatoes. They are super easy to use which is why I like cooking with them. No washing necessary, and no peeling necessary. For this Crab Boil Potato Salad, I sliced some of the big ones in thirds and the rest in half. Then a simple boil for 15 min. until just tender is all that is needed.
I have made lots of potato salads before like Herbed Potato Salad {No Mayo}, Hot German Potato Salad, Little Potato Green Bean Salad, and even a Potato Salad Appetizer. Potato salad is of course great for a BBQ, backyard gathering, picnic and more!!
The Crab Boil Potato Salad has all the wonderful ingredients you would expect at a crab boil. Potatoes, corn, crab but I also added in celery for crunch and bacon for more flavor. A simple small can of crab goes a long way in this salad. I even added in Old Bay Seasoning to give the salad that authentic crab boil taste!!
Little potatoes are perfect for this salad and I used Little Potato Company’s Terrific Trio for this recipe to give the salad some gorgeous color from red, yellow and blue Creamers!! They come in a 1.5 and 3 lb. bags and are available along with all their products in the US and Canada.
You will love this potato salad as it is easy and delicious. It really screams summer and goes great with barbecued meat or fish. A crab boil literally says party so taking this salad along will get everyone’s attention!

Crab Boil Potato Salad
This Crab Boil Potato Salad has all the flavors of a crab boil and more. It is easy and uses simple ingredients but its rich creamy goodness is exploding with flavors.
Ingredients
- 1 1/2 lbs. Little Potato Company Terrific Trio
- 1 cup frozen corn, thawed
- 2 celery stalks, chopped
- 6 slices bacon, cooked
- 1 cup mayonnaise
- Juice of 1/2 lemon
- 1 tsp. Old Bay Seasoning
- Fresh cracked pepper
- 1 (120 gm.) can of chunk crab, drained
- Parsley for garnish
Instructions
- Cut potatoes in half or thirds for the larger ones and boil for 15 min. in a medium sized pot until just tender. Let cool to warm. Then add in the corn, celery, bacon, mayo, lemon juice, Old Bay Seasoning, fresh cracked pepper and stir. Gently fold in crab. Chill and serve topped with parsley.
