Don’t you just love summer!! Hanging in the back yard, chillin’ under a tree, or in a hammock, on a blanket or in a lounge chair. Then there is always dinner to fix and the family to feed. Well, I have got it simple and delicious for you with this Korean salad for Summer Chillin’ this week. Grill up some steak, chicken, fish, this would go with so much.
Or keep it totally cool and serve this up with some fresh bread or summer fruit and that is all you really need. A big beautiful salad won’t weigh you down on a steamy hot day!! The dressing is easy and delicious and can be made ahead of time. What does summer chillin’ mean to you?

Korean Salad for Summer Chillin' #SundaySupper
A delicious summer salad for those hot summer days!!
Ingredients
Salad
- 1-2 heads of leaf lettuce
- 1 small can mandarin oranges
- 1 small can waterchestnuts
- 3 green onion, chopped
- Crispy chow mein noodles
Dressing
- 3/4 cup canola oil
- 1/3 cup sugar
- 1/4 cup vinegar
- 1/2 small onion grated
- 2 tsp. worcestershire sauce
- 3 tsp. soy sauce
- Salt and pepper to taste
- 1 Tbsp. parsley, chopped
Instructions
- Pour all ingredients into a jar and shake well. Mix salad ingredients together. Top with the crunchy chow mein noodles and pour on as much dressing as desired. Serve at once.
