Easy Broccoli Turkey Divan

This Easy Broccoli Turkey Divan is great for turkey or chicken leftovers. It whips up quickly and gives you a whole new delicious meal. The creamy sauce is so good with the crunchy cracker and crispy onion topping.

Ingredients
 

  • 2 Tbsp. butter
  • 1/2 onion chopped
  • 2 cloves garlic minced
  • 2 Tbsp. flour
  • 1/2 Tbsp. Dijon mustard
  • I cup whole milk
  • I cup chicken stock
  • 1/4 cup sour cream
  • 1/2 cup sharp white cheddar cheese grated
  • Small pinch of cayenne
  • Salt and pepper to taste
  • 1 tsp. curry powder
  • 4 cups frozen broccoli florets cooked
  • 2 cups cooked turkey cubed
  • 1/2 cup Ritz crackers or similar
  • 1 Tbsp. butter melted
  • 1/2 cup canned fried onion

Instructions
 

  • In a large non-stick skillet, melt the butter over medium heat. Saute the onion and garlic until soft but not browned. Add the flour, cook for 1 min.
  • Add in the Dijon mustard and then slowly add in the milk and chicken stock while whisking. Cook for about 7 min. until thickened.
  • Preheat oven to 425F.
  • Stir in the cheese, sour cream, a pinch of cayenne, salt and pepper to taste, and curry powder.
  • Add in the turkey and broccoli. Stir to coat. Place into a greased 8x11" casserole
    dish.
  • Crush Ritz crackers. Melt the remaining Tbsp. of butter and stir in crackers to coat evenly. Sprinkle on top of the casserole.
  • Bake for 20 minutes or until starting to bubble. Sprinkle on the fried onions and bake for another 5 minutes or until bubbly and warmed through. Make sure the onions don't burn.
