This Easy Broccoli Turkey Divan is great for turkey or chicken leftovers. It whips up quickly and gives you a whole new delicious meal. The creamy sauce is so good with the crunchy cracker and crispy onion topping.
In a large non-stick skillet, melt the butter over medium heat. Saute the onion and garlic until soft but not browned. Add the flour, cook for 1 min.
Add in the Dijon mustard and then slowly add in the milk and chicken stock while whisking. Cook for about 7 min. until thickened.
Preheat oven to 425F.
Stir in the cheese, sour cream, a pinch of cayenne, salt and pepper to taste, and curry powder.
Add in the turkey and broccoli. Stir to coat. Place into a greased 8x11" casserole dish.
Crush Ritz crackers. Melt the remaining Tbsp. of butter and stir in crackers to coat evenly. Sprinkle on top of the casserole.
Bake for 20 minutes or until starting to bubble. Sprinkle on the fried onions and bake for another 5 minutes or until bubbly and warmed through. Make sure the onions don't burn.
