A delicious frozen mocktail with tropical pineapple and coconut flavors. You can easily double or halve this recipe.

Ingredients
 

  • 3/4 cup pineapple juice unsweetened
  • 1 15oz can Coco Lopez Cream of Coconut
  • juice from half a fresh lime
  • 3 cups frozen pineapple chunks
  • 1 cup ice cubes
  • fresh pineapple wedges and maraschino cherries for garnish optional

Instructions
 

  • Place the ingredients in a large blender in the following order: pineapple juice, cream of coconut, lime juice, fresh pineapple, ice cubes.
  • Blend until smooth but still thick.
  • Pour into cups and garnish with fresh pineapple wedges and maraschino cherries. Serve immediately.

Notes

Chilling your cups by either placing them in the freezer for 15 minutes before serving, or filling them with ice while you prepare the drink and then discarding the ice, can help the frozen virgin pina colada stay cold and thick longer while you sip on it!
