Chicken Sausage Pasta

Ingredients
 

  • 16 oz. spaghetti
  • 4 Tbsp. olive oil divided
  • 1 package chicken sausage cut in rings, about 4 links
  • 1 cup chopped zucchini
  • 1 small white onion peeled and minced
  • 3 garlic cloves minced
  • 2 Tbsp. parsley
  • 3/4 tsp. sea salt
  • 1/2 tsp. ground black pepper
  • 3/4 cup parmesan cheese grated

Instructions
 

  • Bring a large pot to boil with salted water. Boil the spaghetti as instructed on the package. Keep ½ cup of pasta water.
  • Meanwhile, on medium heat, add the olive oil to a large pan. Then add the sausage and cook for 1 minute by stirring occasionally (It’s ok if they break). Now add zucchini, onion, and garlic and cook, stirring all together. Cook until the zucchini is soft. About 2 minutes.
  • Add pasta, parsley, salt, pepper, and oil. Stir together. Sprinkle with Parmesan cheese and add the pasta water. Stir to get a creamy sauce.
  • Sprinkle it with pine nuts and serve.
