Chicken Sausage Pasta

- 16 oz. spaghetti
- 4 Tbsp. olive oil divided
- 1 package chicken sausage cut in rings, about 4 links
- 1 cup chopped zucchini
- 1 small white onion peeled and minced
- 3 garlic cloves minced
- 2 Tbsp. parsley
- 3/4 tsp. sea salt
- 1/2 tsp. ground black pepper
- 3/4 cup parmesan cheese grated
- 1/4 cup Pine nuts toasted
Bring a large pot to boil with salted water. Boil the spaghetti as instructed on the package. Keep ½ cup of pasta water.
Meanwhile, on medium heat, add 3 tbsp of olive oil to a large pan. Then add the sausage and cook for 8 minute by stirring occasionally (It’s ok if they break). Now add zucchini, onion, and garlic and cook, stirring all together. Cook until the zucchini is soft. About 4 - 6 minutes. Make suer that the sausage is cooked through. Add pasta, parsley, salt, pepper, and remaining tbsp of olive oil. Stir together. Sprinkle with Parmesan cheese and add the pasta water. Stir to get a creamy sauce.
Sprinkle it with the toasted pine nuts and serve.
