Chicken Sausage Pasta

This simple yet delicious pasta can be on your table in less than 30 minutes. Add a simple side dish like a garlic bread or salad, and you have a feast for any night of the week.

Ingredients

  • 16 oz. spaghetti
  • 4 Tbsp. olive oil divided
  • 1 package chicken sausage cut in rings, about 4 links
  • 1 cup chopped zucchini
  • 1 small white onion peeled and minced
  • 3 garlic cloves minced
  • 2 Tbsp. parsley
  • 3/4 tsp. sea salt
  • 1/2 tsp. ground black pepper
  • 3/4 cup parmesan cheese grated
  • 1/4 cup Pine nuts toasted

Instructions

  • Bring a large pot to boil with salted water. Boil the spaghetti as instructed on the package. Keep ½ cup of pasta water.
  • Meanwhile, on medium heat, add 3 tbsp of olive oil to a large pan. Then add the sausage and cook for 8 minute by stirring occasionally 
    (It’s ok if they break)
    . Now add zucchini, onion, and garlic and cook, stirring all together. Cook until the zucchini is soft. About 4 - 6 minutes. Make suer that the sausage is cooked through.
  • Add pasta, parsley, salt, pepper, and remaining tbsp of olive oil. Stir together. Sprinkle with Parmesan cheese and add the pasta water. Stir to get a creamy sauce.
  • Sprinkle it with the toasted pine nuts and serve.
