Ingredients
 

  • 2 chicken breasts pounded to ¼ inch thick
  • ½ cup jarred pizza sauce
  • 1 cup shredded mozzarella
  • ½ cup pizza pepperoni slices chopped
  • ¼ cup grated parmesan
  • ½ cup cherry tomatoes halved
  • ¼ cup fresh basil leaves torn
  • Kosher salt and pepper to taste

Instructions
 

  • Preheat your oven to 400 degrees F.
  • Line a baking sheet with foil, spray with cooking spray, and set aside. This makes for fast cleanup, but it is optional.
  • Place the chicken breast between 2 sheets of wax paper and pound out until about ¼ inch thick.
  • Place the pounded-out chicken on the greased and foiled baking sheet and lightly season with salt and pepper.
  • Completely cover each chicken breast with pizza sauce.
  • Divide the mozzarella cheese, chopped pepperoni, and parmesan cheese between the 2 chicken breasts.
  • Cook for 14-16 minutes or until the chicken is done.
  • When the chicken is done, move the oven rack to the top and broil for 1 minute to brown the cheese.
  • Remove the chicken from the oven and sprinkle with cherry tomatoes and torn basil leaves.
  • Using a pizza cutter, slice the chicken and serve with a salad if desired.
