Preheat your oven to 400 degrees F.
Line a baking sheet with foil, spray with cooking spray, and set aside. This makes for fast cleanup, but it is optional.
Place the chicken breast between 2 sheets of wax paper and pound out until about ¼ inch thick.
Place the pounded-out chicken on the greased and foiled baking sheet and lightly season with salt and pepper.
Completely cover each chicken breast with pizza sauce.
Divide the mozzarella cheese, chopped pepperoni, and parmesan cheese between the 2 chicken breasts.
Cook for 14-16 minutes or until the chicken is done.
When the chicken is done, move the oven rack to the top and broil for 1 minute to brown the cheese.
Remove the chicken from the oven and sprinkle with cherry tomatoes and torn basil leaves.
Using a pizza cutter, slice the chicken and serve with a salad if desired.
