1 1/2cupschopped red bell pepperabout 1 large bell pepper

a pinch or two of red pepper flakes
3tablespoonsextra virgin olive oildivided
18 oz block of feta cheese, cut into four pieces
4ouncescream cheesecut into four pieces
Crackerspita chips, and/or crudites for serving
Instructions
Preheat the oven to 450 degrees Fahrenheit. In a shallow baking dish, combine the chopped bell pepper, minced garlic, chopped oregano, red pepper flakes, and 1 1/2 tablespoons of olive oil. Stir to make sure everything is well coated in the olive oil. Roast for 20 minutes or until the mixture is sizzling and the bell peppers are soft.
Remove the cheese from the oven and carefully nestle the chunks into the mixture. Drizzle with the remaining olive oil, then roast for another 15 minutes or until the cheeses are soft.
Carefully transfer the mixture to a small food processor or blender and process until smooth. Can be served warm or chilled. Serve with crackers, pita chips, and crudites.
