Feta Roasted Red Pepper Dip

A creamy, savory dip that is super simple to make. Serve with Pita Chips or your favorite crudité.

Ingredients

  • 1 1/2 cups chopped red bell pepper about 1 large bell pepper
  • 2 tablespoons minced garlic
  • 1 tablespoon chopped fresh oregano
  • a pinch or two of red pepper flakes
  • 3 tablespoons extra virgin olive oil divided
  • 1 8 oz block of feta cheese, cut into four pieces
  • 4 ounces cream cheese cut into four pieces
  • Crackers pita chips, and/or crudites for serving

Instructions

  • Preheat the oven to 450 degrees Fahrenheit. In a shallow baking dish, combine the chopped bell pepper, minced garlic, chopped oregano, red pepper flakes, and 1 1/2 tablespoons of olive oil. Stir to make sure everything is well coated in the olive oil. Roast for 20 minutes or until the mixture is sizzling and the bell peppers are soft.
  • Remove the cheese from the oven and carefully nestle the chunks into the mixture. Drizzle with the remaining olive oil, then roast for another 15 minutes or until the cheeses are soft.
  • Carefully transfer the mixture to a small food processor or blender and process until smooth. Can be served warm or chilled. Serve with crackers, pita chips, and crudites.
