Arroz con Leche (Rice Pudding)

Creamy and delicious rice pudding with a hint of cinnamon that makes it warm and comforting. Make it once and repeat it forever!

Ingredients

  • 1 cup long white rice
  • 2 cups water
  • 2 cups whole milk
  • 1 cup white sugar
  • 1 cinnamon stick
  • 1 tsp vanilla extract
  • Ground cinnamon for serving

Instructions

  • First, you'll need to rinse the rice under cold water until the water runs clear. About four to five times is ok.
  • Then, combine rinsed rice and water in a medium-size saucepan. Bring it to a boil and reduce heat to low. Cover and let it simmer until the rice is soft and tender and most of the water is absorbed. About 15 to 20 minutes.
  • Once the rice is cooked, add the milk, sugar, and cinnamon stick. Stir well. Cook over medium-low heat, stirring frequently to prevent sticking, for about 20-25 minutes or until the mixture thickens to your desired consistency.
  • Remove the cinnamon stick and stir in the vanilla extract. Taste and adjust sweetness if needed by adding a little sugar if needed.
  • Serve it warm or chilled and garnish with ground cinnamon just before serving.
