Butter Swim Biscuits

These Butter Swim Biscuits over exceed any other quick-mix bun around. They are fast and easy to make and absolutely perfectly buttery and fluffy.

Ingredients

  • 2 1/2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt
  • 2 cups buttermilk
  • 1/2 cup butter melted

Instructions

  • Preheat oven to 450 degrees Fahrenheit.
  • In a medium bowl, whisk together the flour, baking powder, sugar, and salt.
  • Add the buttermilk and stir until the batter is mixed. Be careful not to over-mix. The batter will be thick, and it is OK if it has a few small lumps.
  • Melt the butter in a microwave safe dish and pour the melted butter into an 8 x 8 baking dish.
  • Pour the dough gently into the baking dish on top of the butter. Using a spatula, spread the dough out to the corners of the baking dish.
  • Again, using the spatula, deeply score the dough making 9 equal-sized squares (in a 3 x 3 pattern).
  • Bake in a preheated oven for 25 to 28 minutes. The tops of the biscuits should be golden brown.
  • Remove from oven and allow the biscuits to rest for 5 to 7 minutes to allow the butter to be absorbed.
  • Cut and serve warm. (No butter required for these biscuits!)
