Campfire Home Fries
These Little Potato Campfire {Grill} Home Fries are pure comfort food for the summer months. They can be cooked up on an open fire or on the grill of your BBQ.

- 1 lb. The Little Potato Company's Roasted Red Pepper and Onion Oven|BBQ Ready Pack
- 2 Tbsp. olive oil
- 4 slices thick cut bacon cooked crisp and cut into lardons
- 1/2 cup cheese curds torn apart if large
- 1 cup medium cheddar cheese grated
- 3 green onions chopped
Slice the Little potatoes in half if desired and place back into the easy-to-cook-and-serve tray. Season with 1/2 the seasoning pack that is included. Drizzle with 2 Tbsp. olive oil and toss.
Roast on a medium high grill or campfire for 30-40 min. or until golden brown and tender.
Keep them in the same easy-to-cook-and-serve tray or transfer to a cast iron pan. Toss with the remaining seasoning.
Top with the cheese curds, cheddar cheese and bacon. Heat on the BBQ until cheese is melted.
Top with green onion and serve.
