Chicken Lettuce Wraps

- 1 1/2 Tbsp. canola oil
- 1 lb. ground chicken
- 2 cloves garlic minced
- 1 onion diced
- 1/2 cup mushrooms diced (about 2 large)
- 1/4 cup hoisin sauce
- 2 Tbsp. soy sauce
- 1 tsp. sesame oil
- 1 Tbsp. rice wine vinegar
- 1 Tbsp. jarred ginger
- 1 Tbsp. Sriracha optional
- 1/3 cup cashews chopped
- 1 8 oz. can water chestnuts, drained and diced
- 2 green onions sliced
- Salt and pepper to taste
- 1 large head butter lettuce washed and leaves ready
Heat the canola oil in a large saucepan or wok over medium heat. Add the chicken and cook until browned. Make sure to break apart while cooking.
Add in the garlic, onion and mushrooms. Stir and cook until onions are translucent, 3-5 minutes.
Add in the hoisin, soy sauce, sesame oil, rice wine vinegar, ginger and Sriracha if using. Stir to coat the chicken mixture and cook for 1 minute.
Add in the cashews, water chestnuts and green onions and cook for 1-2 minutes. Season with salt and pepper.
To serve scoop several spoonfuls of the chicken mixture onto a lettuce leaf and fold over and eat like a taco.
