These Little Potato Campfire {Grill} Home Fries are pure comfort food for the summer months. They can be cooked up on an open fire or on the grill of your BBQ.

Ingredients
 

  • 1 lb. The Little Potato Company's Roasted Red Pepper and Onion Oven|BBQ Ready Pack
  • 2 Tbsp. olive oil
  • 4 slices thick cut bacon cooked crisp and cut into lardons
  • 1/2 cup cheese curds torn apart if large
  • 1 cup medium cheddar cheese grated
  • 3 green onions chopped

Instructions
 

  • Slice the Little potatoes in half if desired and place back into the easy-to-cook-and-serve tray. Season with 1/2 the seasoning pack that is included. Drizzle with 2 Tbsp. olive oil and toss.
  • Roast on a medium high grill or campfire for 30-40 min. or until golden brown and tender.
  • Keep them in the same easy-to-cook-and-serve tray or transfer to a cast iron pan. Toss with the remaining seasoning.
  • Top with the cheese curds, cheddar cheese and bacon. Heat on the BBQ until cheese is melted.
  • Top with green onion and serve.
