Oatmeal Cookie Bars Recipe

These Oatmeal Cookie Bars taste like a traditional oatmeal cookie with the added crunch from yummy M&Ms candy.

Ingredients

  • ½ cup salted butter melted
  • 1 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1 ¼ cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 cup M&Ms

Instructions

  • Preheat your oven to 350°F.
  • Use an electric hand mixer to cream the butter and sugar together for about 2 minutes, or until smooth and creamy. Whisk in the egg and vanilla.
  • Add the baking soda and flour to the mixing bowl and reduce your mixer to a low speed. Gently whisk the wet and dry ingredients together until no pockets of flour remain.
  • Gently fold in the oats and M&Ms until they are evenly distributed throughout the cookie dough.
  • Press your cookie dough into an 8x8-inch baking dish. Bake your cookie bars for 25 minutes, or until the top begins to turn golden brown. Let your bars cool for at least 15 minutes before slicing. Enjoy!
