Ingredients

  • 1 cup raw whole almonds
  • 1 cup raw whole cashews
  • cup raw pepitas
  • 2 tablespoons coconut oil melted
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup dried cranberries
  • cup dried apples roughly chopped
  • 1 cup white chocolate chips

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • Add the almonds, cashews, and pepitas to a large bowl. Mix together the melted coconut oil, brown sugar, cinnamon, salt, and nutmeg in a small bowl, then pour over the nuts and seeds. Toss until everything is coated.
  • Spread the nut mixture in a single layer on the baking sheet. Bake for 5-8 minutes, until lightly toasted. Remove from the oven and let cool completely on the baking sheet for at least 30 minutes. Break apart any clumps that form as it cools.
  • Add the spiced nuts and seeds with the cranberries and apples in a large bowl. Stir to distribute the fruit throughout the mix. Fold in the white chocolate chips last.
  • Portion the trail mix into the resealable bags for gifting.
