Ingredients
 

  • 1 lb. extra-lean ground beef
  • 1 large onion chopped
  • 2 tsp. minced garlic jarred
  • 1 small red pepper diced
  • 1-15 oz. can red kidney beans rinsed and drained
  • 1- 8 oz. can tomato sauce
  • 2 medium ripe tomatoes chopped
  • 1/2 cup elbow macaroni
  • 1/2 cup water
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. dried cilantro
  • 1 tsp. salt
  • Freshly ground pepper to taste
  • 1 cup Mexican blend cheese grated

Instructions
 

  • In a large skillet or saute pan cook the beef until starting to brown, add in the onions, pepper, and garlic, and cook until translucent.
  • Add in the kidney beans, tomato sauce, tomatoes, macaroni, water, chili powder, cumin, cilantro, salt, and pepper. Bring to a boil, cover, reduce to simmer, and cook for 20 min. Top with the cheese in the last few minutes.
