This light and fresh Fruit Salad with Honey Lime Dressing is perfect for a brunch like for Mother's Day, Easter, or over the holidays. Just use the fruit that is in season and is the freshest you can find.

Ingredients

cups
fresh strawberries
chopped
1 1/2

fresh pineapple
chopped
1 1/2
cups
blueberries
1 1/2
cups
cantaloupe melon
chopped

cup
green seedless grapes
sliced in half

kiwis
peeled and chopped
2
mandarin oranges
peeled and broken into slices * or 1 - 15 oz. can mandarins, drained
fresh mint leaves for decoration
Honey Lime Dressing
1
tsp
honey
2
tsp
lime zest
zest of 1 medium lime
1 1/2
tbsp
fresh lime juice
Instructions
Add all the fruit to a large mixing bowl. This can be done hours ahead of time and refrigerated.
In a small bowl, whisk together the honey, lime zest, and lime juice.
When ready to serve pour the honey lime mixture over the fruit and gently toss to evenly coat the fruit.
The salad is now ready to serve; serve immediately.
