What Goes into This Fruit Salad?

The beauty of a fresh fruit salad is that you can use what is in season and your favorite fruits!! Try to keep the fruits, though, like a rainbow for a variety of colors and flavors. This makes for the best visual and appealing salad.
You could use canned fruit in a pinch, like mandarins, but I would not use frozen fruit for a salad like this; really fresh is best.
Now I like a lot of things and very few I don’t like but I have to say that a creamy fruit salad or one with a creamy texture is not what I like at all. Not when you can have a gorgeous easy fruit salad and salad dressing like this one. I do love a watermelon salad skewer or a winter fruit salad, but again the flavors of the fruit aren’t hidden in fluff.
The juice and honey, along with the lime, make the perfect light and flavorful dressing for this salad.
Ingredients
Fresh strawberries, chopped – In the spring, you may find colossal strawberries, but in the summer, you may also find smaller, sweeter wild strawberries. Just make sure they are fresh and not soft and turning.
Fresh pineapple, chopped – To tell if a pineapple is fresh, you can pull some of the inner leaves at the top of the pineapple, and if they remove easily, the pineapple is fresh. You should also be able to get a fresh pineapple smell from the bottom of the fruit.
Blueberries – These not only add a hit of flavor and nutritional flavor but also their color can’t be beaten.
Cantaloupe melon, chopped – Other melons like watermelon or honeydew work well in this fruit salad too.
Green seedless grapes, sliced in half – You can use red grapes here too.
Kiwis, peeled and chopped – These add another diverse green color to your salad; only a couple of small kiwis are needed.
Mandarin oranges, peeled and broken into slices – This is the one ingredient you can use canned, 1 – 15 oz. can mandarins, drained works well.
Fresh mint leaves for decoration – Mint in this salad adds color and bright flavors.
Honey Lime Dressing
Honey – You can also use agave to keep the recipe vegan.
Lime zest (zest of 1 medium lime) – Make sure to zest the lime first before juicing; it is so much easier then.
Fresh lime juice – I love the flavor of lime in a fruit salad; it really livens up all the flavors. I prefer lime over lemon juice for this recipe.
How to Make a Simple Fruit Salad?




Add all the fruit to a large mixing bowl. This can be done hours ahead of time and refrigerated.
In a small bowl, whisk together the honey, lime zest, and lime juice.
Pour the honey lime mixture over the fruit and gently toss to evenly coat the fruit.
The salad is now ready to serve; serve immediately.

Here are some tips for the best fruit salad you can make.
- You can prepare the fruit ahead of time and leave it in sections like it is shown in this picture. Just before serving, dress it with the lime honey dressing and toss and serve immediately. The lime will start to break down the fruit slightly if it sits. I do find it still good for leftovers the next day, though, but maybe not quite as good.
- I don’t use bananas as they tend to get mushy quickly and won’t be as nice the next day if there are leftovers.
- Don’t refrigerate the dressing; it is best at room temperature if you do make it ahead.
- Always use a proper zester for citrus fruit like the lime in this dressing; you don’t want to get any of the bitter pith.
