Bacon Waffles with Eggs

This amazing recipe for Bacon Waffles with Eggs will have you enjoying all the goodness of eggs in a few ways. The waffles are light and fluffy on the inside and crispy on the outside. Then, a perfect fried egg is added to the top.

Ingredients

Waffles:

  • 3/4 cup crispy bacon bits about 7 strips of bacon
  • 1 3/4 cups cake flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 3 eggs yolks and whites separated
  • 4 Tbsp melted butter
  • 1 1/2 cups milk

Topping:

  • 6 eggs
  • Maple syrup
  • Green onions diced

Instructions

  • Cook the bacon until crispy but not burnt. Allow to cool, crumble and set aside.
  • Preheat your waffle iron and spray both the surfaces with cooking spray.
  • In a large bowl, whisk together the cake flour, baking powder, salt, and sugar.
  • Beat the 3 egg yolks in a medium bowl, add the milk and melted butter to the egg yolks, and whisk to combine.
  • Make a hole in the center of the flour mixture and pour the liquid ingredients into the center. Whisk just enough to combine the dry and liquid ingredients. The batter should be a little lumpy. Fold in the bacon bits and set aside.
  • Beat the egg whites until stiff; be careful not to overbeat them. You don’t want them dry.
  • Gently fold the beaten egg whites into the batter until barely blended.
  • Pour the batter onto the waffle iron and cook as per the waffle iron directions. Repeat until you have used all the batter. Hold the waffles in a warming drawer or warm oven to keep warm.
  • Fry the eggs for the topping sunny side up. You want the whites to be fully cooked but the yolks to be soft and runny.
  • Pour the maple syrup on top of the waffles and serve with a sunny side up egg. Garnish with the green onions.
