This amazing recipe for Bacon Waffles with Eggs will have you enjoying all the goodness of eggs in a few ways. The waffles are light and fluffy on the inside and crispy on the outside. Then, a perfect fried egg is added to the top.
Cook the bacon until crispy but not burnt. Allow to cool, crumble and set aside.
Preheat your waffle iron and spray both the surfaces with cooking spray.
In a large bowl, whisk together the cake flour, baking powder, salt, and sugar.
Beat the 3 egg yolks in a medium bowl, add the milk and melted butter to the egg yolks, and whisk to combine.
Make a hole in the center of the flour mixture and pour the liquid ingredients into the center. Whisk just enough to combine the dry and liquid ingredients. The batter should be a little lumpy. Fold in the bacon bits and set aside.
