These Bacon Waffles with Eggs are a complete breakfast in one bite! Fluffy yet crispy waffles are upped to the next level with wonderful bacon, and best of all, the whole thing is topped off with a perfectly fried egg, giving you the best of all worlds!

Eggs are a must ingredient in waffles to give them that crispy exterior yet fluffy insides. No need to make a sauce when you have a fried or poached egg on top! Eggs are so versatile you can use them in and outside your waffle. This meal is not only perfect for breakfast but fun to make for dinner.

What is the Secret of Making Crispy Waffles?

Eggs are an important ingredient in waffles, as they help the insides get nice and fluffy and also let the outside stay nice and crisp. For waffles, it is essential to use the egg yolks separately from the whipped egg whites. This makes the perfect waffle!

What Ingredients are in Bacon Waffles?

Waffles aren’t just pancakes made in a waffle iron. Here are the ingredients you will need and why they work.

Ingredients

Waffles

Crispy bacon bits – Use freshly cooked bacon; about 7 strips of bacon is perfect.

Cake flour – This flour works best for waffles; if you don’t have any on hand, you can make your own. Start with one level cup of AP flour, remove two tablespoons of the flour, and add two tablespoons of cornstarch. The cornstarch is the secret to the flour and to your waffles.

Baking powder – This helps lift your waffles to make them light and fluffy.

Salt – Brings out the flavors of all the ingredients.

Sugar – You want the waffles just a bit sweet so not too much sugar is added.

3 eggs, yolks and whites separated – You need the eggs to be separated as you whip the whites into stiff peaks.

Melted butter – This adds richness and depth to the waffles.

Milk – Helps to combine all the ingredients, you can use whatever milk you have on hand.

Topping

Eggs – You can do a fried egg as shown or try a poached egg, too.

Maple syrup – I love maple syrup with waffles, but you need to find the real stuff, not pancake syrup.

Green onions – This adds a little color and flavor to the top of the eggs.

Additional tools

Waffle iron and Cooking spray – One tip is to make sure your waffle iron is nice and hot to get that perfect crispy outside.

How to Make Bacon Waffles

Cook the bacon until crispy but not burnt. Allow to cool, crumble, and set aside.

Preheat your waffle iron and spray both surfaces with cooking spray.

Adding baking powder.
Adding salt.
Adding sugar.
Whisked dry ingredients.

In a large bowl, whisk together the cake flour, baking powder, salt, and sugar.

Adding the melted butter to the yolk mixture.

Beat the 3 egg yolks in a medium bowl; add the milk and melted butter to the egg yolks and whisk to combine.

Make a hole in the center of the flour mixture and pour the liquid ingredients into the center. Whisk just enough to combine the dry and liquid ingredients. The batter should be a little lumpy. Fold in the bacon bits and set aside.

Beat the egg whites until stiff; be careful not to overbeat them. You don’t want them dry.

Gently fold the beaten egg whites into the batter until barely blended.

Pour the batter onto the waffle iron and cook as per the waffle iron directions. Repeat until you have used all the batter. Hold the waffles in a warming drawer or warm oven to keep warm.

Fry the eggs for the topping sunny side up. You want the whites to be fully cooked but the yolks to be soft and runny.

Pour the maple syrup on top of the waffles and serve with a sunny-side-up egg. Garnish with the green onions.

General Tips for the Best Waffles

  • Do not overmix the batter, as this will deflate the egg whites.
  • Make sure to have a hot waffle iron and let the waffle iron reheat between waffles.
  • Spray the waffle iron well with cooking spray.
  • Preheat the oven to 200F and have the waffles on a rack on a cookie sheet to stay crisp. If you lay them right on the cookie sheet or a platter, they will release steam and can get soggy.
  • Do use cake flour for the recipe or make your own; the cornstarch also helps in making a crispy waffle.

Waffles:
