Cajun Roasted Potatoes

These crispy golden brown Cajun Roasted Potatoes are a fast and delicious fix for a side dish any time. They pair gorgeously with a roast to chicken, fish, and more! Any night can be livened up with these fantastic Creamer potatoes.

Ingredients

  • 1.5 lb. Little Potato Company's Blushing Belles
  • 2 Tbsp. olive oil
  • 2 tsp. Cajun seasoning your favorite
  • Salt to finish
  • Ranch dressing to serve optional

Instructions

  • Preheat oven to 425F. Cut Blushing Bell Little Potatoes in half and place on a rimmed baking sheet.
  • Sprinkle with olive oil and toss. Sprinkle with Cajun spices and toss the potatoes to coat evenly.
  • Roast in a single layer in the oven for 20 minutes, turn, and roast for another 10 minutes until browned and crispy.
  • Remove from oven, salt slightly. Serve with Ranch dressing for dipping, (optional).
