- 1.5 lb. Little Potato Company's Blushing Belles
- 2 Tbsp. olive oil
- 2 tsp. Cajun seasoning your favorite
- Salt to finish
- Ranch dressing to serve optional
Preheat oven to 425F. Cut Blushing Bell Little Potatoes in half and place on a rimmed baking sheet.
Sprinkle with olive oil and toss. Sprinkle with Cajun spices and toss the potatoes to coat evenly.
Roast in a single layer in the oven for 20 minutes, turn, and roast for another 10 minutes until browned and crispy.
Remove from oven, salt slightly. Serve with Ranch dressing for dipping, (optional).
