Ingredients

heavy cream + 2 Tbsp.

For the icing glaze
1 ½
cups
powdered sugar
½
cup
fresh cherries
pitted
Instructions
Make the scones-
Preheat the oven to 400F and line a baking sheet with parchment paper.
Add the flour, sugar, baking powder and salt to a large mixing bowl and whisk together to combine.
Add the cubed butter and rub together with your fingers until the mixture resembles breadcrumbs.
In a separate bowl, whisk together the cream, egg and vanilla extract.
Add the cherries to the flour mixture and briefly mix, then pour in the cream mixture and stir until everything comes together into a smooth dough.
Shape the dough into a ball with your hands. Place on a lightly floured surface and squash down into a flattened disk.
Slice the disk into 8 wedges and place on your prepared baking sheet. Brush the tops of the scones with 2 Tbsp. of the heavy cream before baking.
Bake for 20-25 minutes or until risen and slightly browned.
Leave the scones on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
Make the icing glaze-
Blitz the cherries in a food processor or blender, then pass through a fine strainer, reserving the juice and discarding the pulp.
Mix together the powdered sugar and 2 tbsp of the cherry juice.
Drizzle the icing all over the cooled scones.
