Cherry Scones

These gorgeous Cherry Scones are easy to make and are a recipe that I love for breakfast or brunch at any time of the year.

Ingredients

  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup butter cold, cubed
  • 1 cup fresh cherries pitted and halved
  • 2/3 cup heavy cream + 2 Tbsp.
  • 1 large egg
  • 1 ½ tsp vanilla extract

For the icing glaze

  • 1 ½ cups powdered sugar
  • ½ cup fresh cherries pitted

Instructions

Make the scones-

  • Preheat the oven to 400F and line a baking sheet with parchment paper.
  • Add the flour, sugar, baking powder and salt to a large mixing bowl and whisk together to combine.
  • Add the cubed butter and rub together with your fingers until the mixture resembles breadcrumbs.
  • In a separate bowl, whisk together the cream, egg and vanilla extract.
  • Add the cherries to the flour mixture and briefly mix, then pour in the cream mixture and stir until everything comes together into a smooth dough.
  • Shape the dough into a ball with your hands. Place on a lightly floured surface and squash down into a flattened disk.
  • Slice the disk into 8 wedges and place on your prepared baking sheet. Brush the tops of the scones with 2 Tbsp. of the heavy cream before baking.
  • Bake for 20-25 minutes or until risen and slightly browned.
  • Leave the scones on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.

Make the icing glaze-

  • Blitz the cherries in a food processor or blender, then pass through a fine strainer, reserving the juice and discarding the pulp.
  • Mix together the powdered sugar and 2 tbsp of the cherry juice.
  • Drizzle the icing all over the cooled scones.
