These deliciously sweet Cherry Scones with a delightful cherry glaze are one way to celebrate the cherry season. They can also be made with frozen cherries when the fresh ones are not in season.

These Cherry Scones are soft, buttery, and sweet, with juicy fresh cherries throughout. They make the perfect breakfast or brunch offering.

What Goes into Cherry Scones?

What is the secret to a good scone? I think there are at least two items that you can’t overlook when making scones so that they turn out lovely and flaky. Use cold butter, really nice and cold, and don’t overwork the dough. This will help get you a tender scone.

Ingredients

For the scones

All-purpose flour – This is the best flour to make a great scone. You can use pastry flour, but I always have AP on hand.

Sugar – Granulated white sugar works best. If you want to decorate the top before baking, you can use coarse sugar.

Baking powder – This helps the scones rise.

Salt – You need salt even in baking as it brings out the flavors of the other ingredients.

Butter (cold, cubed) – Cold butter is the essential ingredient to make great scones; you can get it super cold even by putting it in the freezer for 10 minutes.

Fresh cherries (pitted and halved) – Fresh cherries are wonderful but can also be frozen cherries. They are convenient and already come pitted.

Heavy cream + 2 Tbsp. – The cream is for the dough and for the outside of the scone also to help them brown.

Large egg – The egg helps bind all the ingredients together.

Vanilla extract – This is a standard ingredient in baking for flavor, and vanilla goes so nicely with the cherries, too.

For the icing glaze

Powdered sugar – This sugar, also called confectioner’s sugar or icing sugar, is the perfect sugar for glaze.

Fresh cherries (pitted) – To make the glaze not only cherry flavored but pink, using the cherries again is perfect for the glaze.

How to Make Cherry Scones

How do I make my scones go brown on top?

One way is to paint the top before baking with heavy cream. If you want you can also add a sprinkling of coarse sugar.

Make the scones-

Preheat the oven to 400F and line a baking sheet with parchment paper.

Add the flour, sugar, baking powder, and salt to a large mixing bowl and whisk together to combine.

Add the cubed butter and rub together with your fingers until the mixture resembles breadcrumbs.

In a separate bowl, whisk together the cream, egg, and vanilla extract.

Add the cherries to the flour mixture and briefly mix, then pour in the cream mixture and stir until everything comes together into a smooth dough.

Shape the dough into a ball with your hands. Place on a lightly floured surface and squash down into a flattened disk.

Slice the disk into 8 wedges and place on your prepared baking sheet. Brush the tops of the scones with 2 Tbsp. of the heavy cream before baking.

Bake for 20-25 minutes or until risen and slightly browned.

Leave the scones on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.

Make the icing glaze-

Blitz the cherries in a food processor or blender, then pass through a fine strainer, reserving the juice and discarding the pulp.

Mix together the powdered sugar and 2 tbsp of the cherry juice.

Drizzle the icing all over the cooled scones.

How to Store?

The scones should be stored at room temperature in an airtight container. They are best enjoyed within 2 days.

Can you Freeze Cherry Scones?

You can freeze the scones once made but not baked by wrapping them in plastic wrap and foil. Let thaw while heating the oven, but you can bake them from frozen, adjusting the time as needed.

Baked scones can also be frozen, wrapped well and in an airtight container. Let thaw, heat, and serve. I love them slightly toasted in our toaster oven.

Can I Make the Scones Ahead of Time?

Yes, you can make the dough up in a disc and then wrap it with plastic wrap well and refrigerate overnight. Just slice and bake in the morning.

Ingredients
