These Cherry Cheesecake Popsicles are something like the Good Humor man would carry on his ice cream truck. Rich, creamy, full of cherry goodness, and with that wonderful buttery crunch at the end!

That brings back memories for me hearing the music coming and everyone rushing for money to run out and get their treat! Plus they are a great way to celebrate fresh cherries which I love in everything including cherry pie!!

Cherry Cheesecake Popsicles are a sweet, decadent treat that will remind you of your childhood. I love making frozen treats each summer for our daughter. One of her favorites is homemade Mint Chocolate Chip Ice Cream using fresh chocolate mint from our garden. These are things that memories are made of. You can make special memories with these amazing ice pops too.

I love making homemade recipes as much as I can so that even though they are sugary sweet I know exactly what I have been putting in them.

What Goes Into Cherry Cheesecake Popsicles?

The sweet cherries make the best popsicle recipe around. You have to celebrate this fresh summer fruit when it is in abundance. The cream cheese mixture just makes them even more special giving a nod to a classic cherry cheesecake!

Besides the cherries, the rest of the ingredients are easy to find and readily available everywhere at any time. If you are in a pinch for fresh sweet cherries then frozen can be substituted, they will be packaged at their prime also.

Ingredients

Digestive cookie crumbs

Melted butter

Pitted cherries, divided

Water

Sugar, divided

Cream cheese block

Milk

To make them it couldn’t be easier, letting the blender do all the work. A cherry pitter does come in handy to start with but you can also just cut them in half to remove the pits quickly. You only need a couple of cups so it doesn’t take that long to pit them but if you are like me you may be nibbling on one, two, or more as you go.

In a small bowl, mix the cookie crumbs with the melted butter. Set aside.

Pit and slice the cherries in half.

To a blender, add pitted cherries, water, and 2 tbsp sugar. Blend the cherries and sugar until smooth. Remove and place in a large bowl.

To the blender, add cream cheese, milk, and the remaining 6 tbsp of sugar. Blend until smooth.

In a bowl, mix cream cheese mix with the cherry mix.

Pour the mixture into the popsicle molds, filling up the molds only 2/3rds of the way.

Top with cookie mixture and gently press into the mold. Leave about 1/2 inch of space at the top for the popsicles to expand. Close top and insert popsicle sticks.

Freeze for at least 8 hours or overnight (preferably).

To serve, run the popsicle mold under warm water for 5-10 seconds to easily remove the popsicles.

Notes

.     If you would like the popsicles to be more or less sweet, add or reduce the sugar, 1 tbsp at a time, to your liking.

·    You can substitute digestive cookies for other types of cookies like graham cracker crumbs, gingersnaps, shortbread, etc.

·    Cherries can be substituted for other fruits such as berries, peaches, mango, etc. Use ripe fruits for maximum sweetness and flavor. You can be enjoying these popsicles all summer long with whatever fruits are popping up in the season.

·    These pops melt pretty fast so only remove them from the freezer when ready to serve.

How Long Do Homemade Popsicles Last in the Freezer?

Nothing like this frozen treat lasts long in our house but if you want to make extra and store them in the freezer they do last up to 3 months in the freezer but ideally, I would have these consumed within a week or two and then make fresh ones again.

Keeping them in their plastic molds is best so you make want to purchase more than one mold if you want to make more of these amazing frozen delicacies. It is a good investment if you plan on making lots of different popsicles all summer long.

These Cherry Cheesecake Popsicles are creamy and sweet with an awesome cookie crumble at the end. They are reminiscent of the frozen treats that the ice cream truck would deliver when you were young!

Ingredients
 

  • 1 cup digestive cookie crumbs
  • 3 tbsp melted butter

  • 1 cup milk

Instructions
 

  • In a small bowl, mix the cookie crumbs with the melted butter. Set aside.
