These recipes for Finger Sandwiches are dainty bites packing a whole lot of flavor. They can be used for a simple improvement to your or your child’s lunchbox, a picnic, brunch, baby/wedding shower, party or a fancy afternoon tea. There is a good variety for many tastes; come and see what we are serving up!!

What are finger sandwiches?

Finger sandwiches are also known as “tea sandwiches”. They are normally served crustless and cut into shapes like triangles, squares, rectangles and even circles and hearts. They have simple yet delicious fillings and are normally handheld and just a couple of bites.

If you make all of these, it is going to be a lot of work, but making 1, 2 or 3, it is a breeze to make. Start by upping the game for a snack or lunchbox and try them all, then tell me which one is your favorite.

What are Finger Sandwiches Made of?

Finger Sandwich Ingredients.

Finger sandwiches are made of a variety of ingredients. Most are just simple ingredients that are easily found, but are made up to be a delectable little bite. Here we have 8 sandwiches for you to choose from. We have made small quantities for you to make for a lunch box, but you can double, triple or quadruple the amounts to make more sandwiches as you like.

PB&J Sandwich Roll Ups

Crusts cut off.
Bread rolled out.
Pb&J added.
PB&J rolled up.
PB&J sliced.

Makes 6 finger sandwiches

  • 2 Tablespoons peanut butter
  • 2 Tablespoons jam
  • 2 slices of white bread
PB&J roll ups in a lunch box.
  1. Cut the crusts off of each slice and roll flat with a rolling pin.
  2. Spread 1 Tablespoon of peanut butter on each slice.
  3. Spread 1 Tablespoon of jam on each, leaving about ½” of space at the end to give room for it to spread as you roll it.
  4. Roll into a log towards the edge where you left space.
  5. Using a sharp knife, cut each roll into thirds for a total of 6.

Ham and Cheese Sandwich

Makes 4 finger sandwiches.

  • 3 slices of white bread
  • ¼ cup mayo
  • ⅛ cup Yellow Mustard
  • Cheddar cheese, 2 slices (if using pre-sliced cheese) 
  • 4 slices of deli ham
  • Green leaf lettuce
Ham and Cheese Sandwiches.
  1. In a small bowl, mix ¼ cup mayo with ⅛ cup mustard.
  2. Spread 2 to 3 teaspoons of the mayo-mustard mix on all 3 slices.
  3. Begin assembling your sandwich in this order:
    bread, 1 slice of cheese, 2 slices of ham, lettuce, second slice of bread with the mayo-mustard side face down.
  4. Spread another 2-3 teaspoons of the mayo-mustard mix on the second slice you just placed.
  5. Add another layer of cheese, ham, and lettuce, and top with the remaining slice of bread.
  6. Place 4 toothpicks in each quadrant of the sandwich; this will help secure it while you slice.
  7. With a sharp knife, cut the crust off on each side, then cut into 4 equal squares.

Cucumber Sandwich

Cucumber sandwich ingredients.
Adding whipped cream cheese.

Makes 4 finger sandwiches

  • 1 medium English cucumber, thinly sliced ⅛” thick
  • Whipped cream cheese, 4-6 tablespoons
  • 2 slices of white bread
  • Fresh dill, for garnish
Cucumber Sandwiches.
  1. Spread 2-3 Tablespoons of cream cheese on each slice of bread.
  2. Place 4-5 cucumber slices in a row for a total of 3-4 rows, and top with the remaining slice of bread.
  3. With a sharp knife, cut the crust off of each side, then cut into 4 equal squares.
  4. Garnish with a little bit of fresh dill.

Egg and Smoked Salmon Sandwich

Finished egg and smoked salmon sandwich.

Makes 8 finger sandwiches

  • 1 cup egg salad (4 large eggs, ¼ cup mayonnaise, 1 tablespoon chopped chives, ½ teaspoon prepared yellow mustard, ⅛ teaspoon paprika, salt and pepper to taste)
  • ½ cup smoked salmon
  • 1 heaping tablespoon of capers
  • green leaf lettuce
  • 4 slices of light rye bread
Egg and Smoked Salmon Sandwich.
  1. In a medium bowl, mix together 1 cup of egg salad, ½ cup smoked salmon, and 1 heaping Tablespoon of capers.
  2. Divide the egg salad between two slices of bread, top with lettuce, and place the top slice of bread.
  3. Place 4 toothpicks in each quadrant of the sandwich; this will help secure it while you slice.
  4. With a sharp knife, cut the crusts off of each sandwich, then cut into 4 equal squares or rectangles (depending on the shape of your bread), for a total of 8.

Pimento Cheese Sandwiches

Makes 4 finger sandwiches

  • ½ cup pimento cheese (store-bought or this recipe, 4 ounces shredded sharp yellow cheddar cheese, 1 ounce pimento peppers, coarsely chopped, 3 tablespoons mayonnaise, pinch cayenne pepper, dash of Worcestershire sauce, Kosher salt and freshly ground black pepper to taste.
  • green stuffed olives.
  • 4 slices of white bread.
Variety of finger sandwiches.
  1. Spread ½ cup pimento cheese on a slice of bread, add top slice.
  2. With a sharp knife, cut the crust off of each side, then cut into 4 equal squares.
  3. Pierce a green olive with a toothpick for a total of 4. This can be done just before serving.

Strawberries and Cream Sandwich

Makes 6 finger sandwiches

  • 1 pint of strawberries, sliced ¼” thick
  • ½ cup whipped cream cheese
  • 1 cup Cool Whip, if frozen, you can leave it out on your counter for 15 min or until it has softened for easy mixing.
  • 4 slices of white bread
  • mint leaf garnish
  • 2” heart-shaped cookie cutter
Strawberries and Cream Sandwich.
  1. In a medium bowl, gently fold the whipped cream cheese and Cool Whip together until combined, set aside.
  2. Using the heart-shaped cookie cutter, cut 3 hearts out of each slice for a total of 12.
  3. Use a knife or the back of a spoon to spread 1 Tablespoon of the cream cheese-cool whip mixture onto each heart (all 12). 
  4. Place a layer of strawberries and top with another heart.
  5. Lastly, garnish with some mint leaves just before serving.

BLT Sandwich

BLT sandwich ingredients.

Makes 4 finger sandwiches

  • 2 slices of bacon, fried
  • Green leaf lettuce
  • ½ cup grape tomatoes, quartered
  • ¼ cup of mayo
  • 1 Tablespoon Chives
  • 2 slices of white bread
  • 2” round cookie cutter
BLT Sandwich.
  1. Using the cookie cutter, cut 4 rounds out of each slice of bread (you should be able to get about 4, but that will depend on the size of your bread).
  2. Divide bacon by breaking each slice in half and then half again for 8 small pieces.
  3. In a small bowl, mix together the ½ cup grape tomatoes, ¼ cup of mayo, 1 Tablespoon of chives and a pinch of salt.
  4. Spoon 1 Tablespoon of the tomato-mayo mixture, scooping up about 4 pieces of tomato, and spread onto 4 rounds. Spread a thin layer of any remaining mayo onto the top sandwich rounds. 
  5. Next, add a layer of lettuce, tomato-mayo mixture, lettuce, and 2 small bacon pieces.
  6. Place the top piece of bread and secure it with a toothpick.

Turkey Pesto Sandwich

Crust removed.
Cut into triangles.

Makes 4 finger sandwiches

  • 2 tablespoons cream cheese, divided
  • 4 teaspoons of green pesto
  • 1 tomato, sliced
  • 4 slices of turkey
  • 2 slices of whole wheat bread

  1. Spread 1 Tablespoon of whipped cream cheese on each slice of bread, followed by 2 teaspoons of pesto.
  2. Assemble by layering with slices of tomato and turkey, then place the top piece of bread.
  3. With a sharp knife, cut the crust off of each side, then make two diagonal cuts to get 4 equal triangles.

How do you keep tea sandwiches from drying out

The best way to have fresh sandwiches is to make them as close to serving as possible. If you do need to make ahead, then use a layer of parchment on the top and bottom, lightly wrap in plastic wrap and store in an air-tight container.

If you let the sandwiches set in the refrigerator for an hour or two before slicing into serving sizes, this helps in cutting them easier.

Also, putting a barrier of a spread, like cream cheese or butter, and then anything moist will help the bread from going soggy.

If you are going to make a large amount of these, do a test run beforehand to find the best results for what you need.

PB&J Sandwich

Make 6 Finger Sandwiches

  • 2 Tablespoons peanut butter
  • 2 Tablespoons jam
  • 2 slices of white bread

Ham and Cheese Sandwich

Makes 4 Finger Sandwiches

  • 3 slices of white bread
  • ¼ cup mayo
  • ⅛ cup Yellow Mustard
  • cheddar cheese 2 slices (if using pre-sliced cheese)
  • 4 slices of deli ham
  • green leaf lettuce

Cucumber Sandwich

Makes 4 Finger Sandwiches

  • 1 medium English cucumber thinly sliced ⅛” thick.
  • whipped cream cheese 4-6 tablespoons
  • 2 slices of white bread
  • fresh dill for garnish

Egg and Smoked Salmon Sandwiches

Makes 8 Finger Sandwiches

  • 1 cup egg salad (4 large eggs, ¼ cup mayonnaise, 1 tablespoon chopped chives, ½ teaspoon prepared yellow mustard, ⅛ teaspoon paprika, salt and pepper to taste)
  • ½ cup smoked salmon
  • 1 heaping tablespoon of capers
  • green leaf lettuce
  • 4 slices of light rye bread

Pimento Cheese Sandwiches

Makes 4 finger sandwiches

  • ½ cup pimento cheese (store-bought or this recipe) 4 ounces shredded sharp yellow cheddar cheese, 1 ounce pimento peppers, coarsely chopped, 3 tablespoons mayonnaise, pinch cayenne pepper, dash of Worcestershire sauce, Kosher salt freshly ground black pepper to taste
  • 4 slices of white bread
  • 4 green stuffed olives for garnish

Strawberries and Cream Sandwich

Makes 6 finger sandwiches

  • 1 pint of strawberries sliced ¼” thick
  • ½ cup whipped cream cheese
  • 1 cup cool whip if frozen you can leave it out on your counter for 15 min or until it has softened for easy mixing.
  • 4 slices of white bread
  • Mint leaf garnish
  • 2 ” heart shaped cookie cutter

BLT Sandwich

Makes 4 finger sandwiches

  • 2 slices of bacon fried
  • Green leaf lettuce
  • ½ cup grape tomatoes quartered
  • ¼ cup of mayo
  • 1 Tablespoon Chives
  • 2 slices of white bread
  • 2 ” round cookie cutter

Turkey Pesto

Makes 4 finger sandwiches

  • 4 slices of turkey
  • 2 tablespoon cream cheese divided.
  • 4 teaspoons of green pesto
  • 1 tomato sliced
  • 2 slices of whole wheat bread

Instructions
