Ingredients

  • 2 ¼ cups rolled oats
  • ¾ cup walnuts
  • cup raw almonds
  • ½ cup plain cashews
  • cup honey
  • 5 Tablespoons salted butter melted
  • ¾ teaspoon cinnamon
  • 1 cup dried cranberries
  • ¾ cup white chocolate chips

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and coat a large sheet pan (18×13 inches) with cooking spray or line a baking sheet with parchment paper.
  • Put the dry ingredients as in the rolled oats, walnuts, almonds, and cashews, in a large bowl. Stir together gently.
  • Mix together the honey, salted butter, and cinnamon in a small bowl until completely combined.
  • Pour the honey mixture over the rolled oat mixture and stir until everything is well-coated.
  • Spread the mixture out evenly onto the prepared sheet pan.
  • Bake in the oven for 6 minutes, and then stir the granola.
  • Return the pan to the oven for another 6-12 minutes or until the oats are lightly golden brown in color.
  • Once the granola is cooked, let it cool completely on the sheet pan until it has completely cooled to room temperature. Do not stir until it is completely cooled.
  • Scoop all the cooled granola into a large bowl and mix in the dried cranberries and white chocolate chips.
  • Serve or store in a container until ready to serve. Give them as gifts for the holidays. You can always make a second batch too.
