Christmas Granola: Cranberry White Chocolate

Christmas Granola: Cranberry White Chocolate is the perfect way to start off a holiday morning!! It is sweet, crunchy, and fun!! This granola makes the perfect easy treat to give to friends in a big festive-looking mason jar. Be a little naughty and add those white chocolate chips in; it makes the perfect Christmas gift. After the holidays, you can leave them out for a nutritious breakfast or snack.

What is in Christmas Granola?

Ingredients for Christmas Granola.

The combination of oats and nuts gives you so much flavor. The recipe is gluten-free, so many people can enjoy it.

Some people like to put a splash of vanilla extract into the honey mixture; you can do as you please.

Ingredients

Rolled oats: These are also known as Old-fashioned oats.

Walnuts: You can switch these out for pecans if you don’t have walnuts.

Almonds: Try almond slices instead of whole almonds for a softer granola.

Cashews: For a little more taste, add some roasted or salted cashews instead. You can also try other nuts like pistachios or macadamia nuts. And add in some seeds, like pumpkin seeds, known as pepitas.

Honey: Feel free to replace this with maple syrup or agave nectar.

Salted butter: Unsalted butter can be used, but make sure to add a pinch of salt for extra flavor. You can substitute coconut oil for the butter if you like. You can substitute coconut oil on a 1:1 basis with butter but use it as you like.

Cinnamon: Use good quality cinnamon; it really makes a difference.

Dried cranberries: I like the red for the holidays especially, but you can substitute with raisins if you like.

White chocolate chips: If you don’t want chocolate in your granola, feel free to remove them. You could also use another type of chocolate chip if you prefer. Nice dark chocolate is healthy and gives a whole other flavor to the granola.

How to Make Christmas Granola

Now, this is the easy part. The recipe simply pulls together in no time.

Preheat the oven to 350 degrees Fahrenheit and coat a large sheet pan (18×13 inches) with cooking spray or line a baking sheet with parchment paper.

Put the dry ingredients as in the rolled oats, walnuts, almonds, and cashews, in a large bowl. Stir together gently.

Mix together the honey, salted butter, and cinnamon in a small bowl until completely combined.

Pour the honey mixture over the rolled oat mixture and stir until everything is well-coated.

Spread the mixture out evenly onto the prepared sheet pan.

Bake in the oven for 6 minutes, and then stir the granola.

Return the pan to the oven for another 6-12 minutes or until the oats are lightly golden brown in color. 

Once the granola is cooked, let it cool completely on the sheet pan until it has completely cooled to room temperature. Do not stir until it is completely cooled.

Scoop all the cooled granola into a large bowl and mix in the dried cranberries and white chocolate chips.

Serve or store in a container until ready to serve. Give them as gifts for the holidays. You can always make a second batch too.

How do I store this Cranberry White Chocolate Granola?

The best way to store this granola is at room temperature. Keep it in a large zipper plastic bag or airtight container for 12-14 days in your pantry. If you wish to store it for longer, place it in the freezer for 5-6 months also in freezer bags or an airtight container.

With what can I eat my Cranberry White Chocolate Granola?

There are so many ways you can eat this delicious granola. Here are a few of my favorites:

Eat it plain, similar to trail mix. I love putting this in plastic baggies and using it as a snack, either for myself or for kids. Be wary of the white chocolate chips melting on a hot day.

Pour some milk and make cereal. This is a slightly indulgent cereal, considering you have some white chocolate chips to eat too.

Add to the top of ice cream for a delicious dessert that is crunchy and sweet.

Sprinkle on top of yogurt with some fruit like blueberries for a homemade parfait.

Top a fruit smoothie with this granola, and never look back! I love that extra crunch on a healthy smoothie. It’s a well-balanced meal!
