Easy Skillet Lasagna

This comfort dish has been converted to a fast and easy meal making skillet lasagna for your family in no time flat. You get all the flavor and no mess with this one pot recipe.

Ingredients

  • 2 Tbsp olive oil
  • 1 medium yellow onion diced
  • 2 tsp garlic minced
  • 1 lb lean or extra ground beef
  • 1 tsp oregano
  • ½ lb lasagna noodles about 7-8 noodles, broken in to 2 inch pieces
  • 1 - 22 ounce jar of pasta sauce
  • 1 cup water
  • Kosher salt and fresh ground pepper to taste
  • ½ cup ricotta cheese
  • 8 ounces shredded mozzarella cheese
  • 1/3 cup grated parmesan cheese
  • Garnish with fresh basil leaves

Instructions

  • In a large skillet with a lid heat the olive oil over medium heat add the onions and garlic and sauté for 3 minutes, stirring so they do not burn.
  • Add the ground beef and cook until browned, breaking it up with a wooden spoon.
  • Next, add the oregano, salt and pepper.
  • Add the lasagna noodles, the jarred sauce and the water and stir to combine.
  • Cover, bring to a boil and allow to simmer over low heat for 15-18 minutes or until the noodles are cooked. Stir occasionally so the noodles won't stick together.
  • Then add the ricotta cheese in dollops around the pan and sprinkle the mozzarella and parmesan over the top.
  • Cover and allow the cheese to melt.
  • Garnish with fresh basil leaves. Serve immediately.
